Chicken Fajitas

I tried to come up with a healthy version of a favorite–chicken fajitas.  I got all fresh ingredients and whole wheat tortillas.  I even made up my own sauce to cook the chicken in.  Traditionally the chicken isn’t cooked in a sauce, but I wanted to add extra flavor.  I mixed fajitas and enchiladas and the end result is this.  Using a George Foreman grill would work great to cook the vegetables, but since I don’t own one I had to use a large skillet.

Ingredients

  • 1 lb chicken breasts, cut into chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 white or yellow onion, sliced
  • 3-4 cloves of garlic
  • 1 small can tomato sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbs olive oil
  • salt and pepper

In a large pan, heat olive oil on medium heat and then add peppers, onion, garlic, salt and pepper.

In a separate pan, heat olive oil and cook chicken with a little bit of salt and pepper.

Once chicken is golden brown on both sides, add tomato sauce, cumin and chili powder. Cook on medium to low heat until sauce is reduced in half and is starting to boil.

Cook the peppers and onions until they start to look like they are becoming charred.

Serve on a whole wheat tortilla. Feel free to add cheese, sour cream, lettuce, etc. to your fajita.
