This is one of those “use what you have” type recipes. I made it up as I went along. I had chicken breasts that needed to be cooked and some grape tomatoes that were starting to wilt in the fridge. Here is the method I followed:
Place chicken breasts in a baking dish
Cover chicken with Extra Virgin Olive oil, salt and pepper
Pour Balsamic vinegar over the chicken.
Place freshly chopped garlic over each chicken breast; one clove per breast.
Lightly sprinkle Parmesan cheese over each chicken breast.
Place grape (or cherry) tomatoes in the dish.
Place baking dish in a pre-heated oven at 350° F and cook for about 25-30 minutes.
Serve with your favorite side and/or a salad.
