Seven Layer Taco Dip

I made this for the holiday party we had a few weeks ago but I am posting it now since it is a good dish to make for your New Years Eve party. Everyone seems to like tacos and I if you make this for a party you will have no left overs.  I changed a few things from the original recipe at an attempt to make it more healthy and taste better. I also inverted two of the steps; I layered the tomatoes before the cheese. Serve this with tortilla chips or pita chips if you wish.

Ingredients

  • 1 can bean dip
  • 2 ripe avocados
  • juice of one lemon
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 6 tbs Greek yogurt
  • 2 oz shredded cheddar cheese
  • 2 oz shredded Monterrey cheese
  • 2 ripe tomatoes
  • 3 green onions
  • 1 cup black olives, sliced

 

Evenly spread bean dip on the bottom of a baking dish.

 

Mash avocados with lemon juice in a bowl and spread over bean dip.

In another bowl, mix seasonings with Greek yogurt and once well blended spread over the avocados.

Chop tomatoes and spread over the yogurt mixture. This is the step I inverted. The cheese should go on top so all the vegetables are on the top.

 

Spread the shredded cheese over the tomatoes.

Spread green onions and olives on the top. Serve with chips.
