Ginger Marmalade Chicken


This is another meal I made a few weeks ago.  My mom mailed me this recipe months ago but I finally decided to make it in September.  When I first read this recipe over I thought it sounded complicated and that is why I put it off.   Don’t let the name of this dish or the ingredients scare you off; it was so easy to make and it was very tasty and healthy. With only 199 calories and 1.5 grams of fat per serving this would be a great meal to make if you are on any diet plan.  I served it with the bulgur pilaf and a simple salad.

Preheat oven to 400° F.


  • 6 chicken breasts
  • 1/2 cup sugar free orange marmalade
  • 2 tsp Dijon mustard
  • 1 tbs Worcestershire sauce
  • 1 tbs low sodium soy sauce
  • 2 tbs rice vinegar
  • 1 tbs minced ginger
  • 1 tsp cornstarch dissolved in 1 tbs cold water



Place chicken breasts side by side in shallow baking dish, just large enough to hold them without overlapping.

In a separate bowl, combine the maramalade, mustard, Worcestershire sauce, soy sauce, vinegar and ginger until well mixed.

Spoon marmalade mixure evenly over chicken breasts.

Bake uncovered 20 to 25 minutes or until chicken is cooked through and golden brown on top.

Carefullly pour the liquid from the baking dish into a small saucepan set over medium heat. Stir up the cornstarch mixture and add it to the saucepan. Cook and stir until the marmalade sauce has thickened. Serve each chicken breast topped with hot marmalade sauce.
