Pasta with Chicken and Pesto

This was a meal that I made up as I was shopping for groceries.  I didn’t really want to spend a long time cooking since its been really hot outside.  I thought pasta would easy to make and to make it lighter and more summer like, a nice pesto would be better than a traditional tomato sauce. As always, feel free to use what you have in your kitchen.

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 3 tbs capers
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 2 tbs olive oil
  • 2 tbs oregano
  • 4 tbs pesto
  • salt and pepper to taste
  • 1 package of any type of pasta

Heat olive oil over medium heat in large sauce pan. Add chicken, tomatoes, capers, onions, garlic, oregano, salt and pepper and cook for about 10 minutes.

Once chicken is browned on both sides, remove from pan and cut into strips. Add chicken back to the pan and fully cook chicken.

Once chicken is throughly cooked, turn off heat. Add cooked pasta and pesto. Mix fully and serve.
