Berry Fruit Salad

I discovered this recipe in 2007 when I was waiting at the check out at the grocery store.  The particular store I was at had a LCD screen with news bits, ads and clips from Food Network shows.  I can’t remember which Food Network personality was making this salad but as I was watching her make it I wanted to get out of the line and pick up the ingredients to make it at home.

The ingredients to this recipe are simple and it is not very time-consuming to put it all together.  It’s perfect to make in the summer because strawberries and blueberries are in season and the combination with fresh lemon juice and mint make it a very refreshing dessert to have with a picnic or a summer-time party. I suggest not making this salad too far in advance of serving because the “dressing” you put on the salad makes the berries become mushy.  This would be perfect at a 4th of July Party with the colors of the berries and served in a white bowl.

Ingredients

  • 1 container of blueberries
  • 1 container of strawberries, sliced
  • juice of one lemon
  • 4 tbs honey
  • fresh mint, chopped

Use a juicer for the lemon juice.

Add the honey to the lemon juice and mix together with a fork.

Roughly chop the mint.

Add the berries and chopped mint to a bowl. Stir together with the lemon/honey mixture.
