Asparagus with Caramelized Onions


I crated this recipe to go along with the Mustard Glazed Salmon.  The asparagus was on sale at the store and I wanted to do something more than just boil or steam them. I had half of a red onion left over in the fridge from another recipe but feel free to use any type of onion.


  • 1-2 pounds asparagus
  • 1/2 onion, chopped
  • 1 garlic clove, chopped
  • 2 tbs olive oil
  • salt and pepper

In a large pan, heat the olive oil over medium heat. Add the chopped onions and garlic and salt and pepper. Cook for about 10-15 minutes until the onions and garlic start to caramelize.

Add asparagus to the pan and cook until soft to the touch of a fork.
